L’enfant terrible…
December 30th, 2008Marco Pierre White. A name that struck fear and respect in a many a cook in London during the 90’s. The original enfant terrible of the culinary scene back then, famous for throwing guest out of his restaurant and charging £25 for a side order of chips.
He was one of the chefs whose work and thought helped developed my philosophy towards cuisine and one of the major influences in my career.
So, it was quite nice to come across this clip of Marco at work during the original UK’s Hell’s Kitchen. Marco was the first chef for Hell’s Kitchen when it was filmed in the UK, Gordon Ramsey came later and by then took the show to the States. Incidently, Gordon Ramsey cooked under Marco while the former was a commis at Harvey’s. Â

Quite funny watching it actually and the first time I laughed at Marco Pierre White.

Now, take a look at this photo that I took during the recent WCA…

Gee! It’s my photo! And it’s been ripped off my site. Wait!! Watermark’s been cropped out and the background’s been blacked out in the hope that it won’t get recognized, maybe. If I remember correctly I did state in the gallery that the photos are for personal use only and no commercial gain and no unauthorized alterations allowed. At  least have the decency to ask!
And this from the Asian Paintball Invitational Tournament in Taiwan, the precursor to the World Games 2009.
I saw the poster sometime back and I really didn’t want to believe that it was my photo but had a nagging feeling that it was. So I checked and well, it’s there for all to see.

Johor Paintball League ‘08…
December 16th, 2008Dropped by to check out the finals of the Johor Paintball League over the weekend. Managed to get in to shoot a little so there are some photos.
While there were questionable calls made during some of the games, it was really delightful to find another team out of Singapore getting into the spirit of things. Presenting, Team Karma!!!

Residentevilchef - myth debunked…
December 12th, 2008With a slow month and the main leagues going into off-season. I figured now was a good time to try to do some changes to the site.
I know basic HTML but suck at CSS so bear with me. Every time I look into the guts of the wordpress engine that I’ve been using for this site I feel like I’m making FRANKENSITE.
Also thought I’d clear the air about certain assumptions people have made about me. So here goes:
- Â ”I’m a full-time chef.” - I used to be a full-time chef. I spent quite a bit of career time as a professional chef but have since “semi-retired“. I still do consulting work for the kitchen.
- “I’m a part-time/hobbyist photographer.” - I’m a full-time photographer now. Have been for the past few years.
- “Residentevilchef! What a cool name!” - It was a nickname that came about from the corporate office of a restaurant group that I used to work for. It’s a play on my job title of Resident Chef and and the fact that I was known for having a deviously mean train of thought sometimes. So much so that the girls in the office would often exclaim, “So EVIL!” whenever I hatch a plot to deal with certain unpopular ass-kissing people.
- “I earn a heck lot of money from paintball photography.” - I must seriously be missing something here.
- “I’m with the Red Sevens.” - Nope. Nadah. Nyet. Nie. Tidak. No. Used to play with them but not anymore.
These are the most common things I hear when people meet me for the first time. Pretty sure I’ll still continue to hear them but what the heck!

Max Lundqvist and the Proud Monkey…
December 1st, 2008Was up in Kuala Lumpur over the weekend to cover Max Lundqvist’s “One with the Gun” clinic for the Dark Angels.
Max, of Joy Division, is a very hands-on coach and a great guy to boot. He teaches strong fundamental techniques but stresses on  the importance of constant practice to solidify those fundamentals in your game.
